The nose finds a fruity, candied, floral and flinty bouquet; maraschino cherry and cranberry come to mind. With a zesty, clean mouthfeel, Vivant delivers flavours of cherry, raspberry, Bartlett pear, pomegranate and Key lime. Estate-grown pinot noir was hand-picked at cool daybreak temperature. The grapes were whole-cluster-pressed directly after picking. Taken from the press, the juice was chilled in a horizontal “dairy tank” prior to cool fermentation in stainless steel.
