100% Tocai Friulano hand-harvested from the single vineyard "Cusins"; the fruit comes from 12-year-old vines. Once harvested the grapes are softly pressed. The juice is cooled and decants naturally, eliminating particles resulting from vinification. Fermentation occurs in stainless steel tanks at a controlled temperature and 50% of the wine completes malolactic fermentation. The final wine is aged on its lees for 8 months with regular stirring, followed by another 6 months in bottle prior to release.
